Local Business Profile: Tiffany’s Bakery

Cakes baked on the premises, secret buttercream frosting formula are keys to 35-year-old family business that began as a franchise store at Rolling Acres Mall.

“When you watch Cake Boss, that’s us,” said Bruce Fisher of himself and co-owner Anthony DeSimone of Tiffany’s Bakery.

The 35-year-old family bakery has made its name on its homemade quality, Fisher said. “Nothing’s brought in frozen or brought in in a bucket and opened,” he said. “When you sit down and put it in your mouth, you know it’s different,” he added.

Known for its buttercream frosting, the bakery closely guards its secret recipe, Fisher said. If you want a sample and you’re not in the market for a full-size cake, Fisher said the bakery always has small cakes for walk-ins.

 How long have you been in business?

Tiffany’s Bakery was established by Fisher’s parents, Richard and Gladys Fisher, 35 years ago as a franchise store. The franchise company has since dissolved, leaving a handful of bakeries by that name in Maryland, North Carolina and the Washington, D.C., area, Fisher said.

DeSimone began working for the Fishers two years after they established the business. Bruce Fisher and DeSimone took over the business in 1998 after it was bequeathed to them. “We’re like brothers,” Fisher said.

 How many people are employed?

Fisher, DeSimone and a recent recruit from the Western Reserve School of Cooking do the baking. The remainder of the 12 employees includes three cake decorators and the sales staff.  Three of Fisher’s children work in the business.

 Where is the company headquartered?

Its first location was in Rolling Acres Mall. Later, the bakery moved to a plaza on Romig Road and about four years ago relocated to its present location at 620 Ridgewood Crossing Dr., in the Ridgewood Crossing plaza just off the Ridgewood-Miller exit of I-77.

What is your product/service?

Tiffany’s Bakery is a full-service bakery, but a big part of its business is wedding cakes, a segment that is growing “by leaps and bounds,” said Fisher. The bakery always has done lots of celebration cakes, which are getting more elaborate. Fisher said he now gets orders for two- and three-tier first birthday cakes

Cookies are popular item, particularly the smiley-face iced sugar cookie. “They sell like crazy. We can hardly keep them on the shelf,” Fisher said.

Since moving to the Ridgewood location, Fisher and DeSimone have added deli-style lunches – sandwiches on bakery produced bread, paninis and wraps with chips and soups. They also added both hand-dipped Ashby-Sterling ice cream which is served year round and frozen custard that is sold in summer months.

What is your goal for the company?

Fisher said his goal is to keep the business growing, but to keep it family oriented. “We treat all of our employees like family,” adding that they work around college-age employees class schedules.

Product quality also is a key to keeping the business vital, he said. “People are watching their calories and they’re watching their money. We have to put out a good product,” he said.

Tiffany’s Bakery is located at 620 Ridgewood Crossing Drive in the Ridgewood Crossing shopping plaza. Summer hours for the business are 7 a.m.-9 p.m. Monday-Saturday and 9 a.m.-5 p.m. Sunday. In winter, Monday-Friday hours are 7 a.m.-5 p.m.
